A handful of mushrooms inspired by the autumn mushroom market at the Windsor branch of Carluccio’s. I had the great pleasure of working for Carluccio’s for a while, and mushroom and truffle time was something we really looked forward to. Risotto with porcini mushrooms, fresh or dried, made with top quality Carnaroli rice, is easy to make and its flavour is hard to beat, especially with a little drizzle of truffle oil. I love it. Proper comfort food.
